For the chicken curry

2 tablespoons flour
1 teaspoon salt
12 teaspoon cayenne pepper
1 lb boneless skinless chicken breast, cut into 1 ½-inch pieces
2 tablespoons canola oil
1 tablespoon curry powder
1 medium onion, sliced
2 garlic cloves, minced
1 cup chicken broth
13 cup golden raisins
1 12 tablespoons tomato paste
14 cup chopped fresh cilantro
14 cup plain nonfat yogurt

Instructions

  • For the chicken curry

    1. Combine flour, salt, and cayenne pepper in a plastic bag. Add chicken in batches, shaking to coat evenly.
    2. Heat canola oil in a large skillet over medium-high heat.
    3. Add the coated chicken and cook until lightly browned. Sprinkle curry powder over the chicken and toss to coat.
    4. Transfer the chicken to a plate.
    5. In the same pan, add sliced onion and minced garlic. Cook for 2 minutes, then stir in chicken broth, golden raisins, and tomato paste.
    6. Return the chicken to the pan. Simmer uncovered for 8 minutes or until the chicken is cooked through and the sauce has thickened.
    7. Garnish with chopped fresh cilantro and a dollop of plain nonfat yogurt.
    8. Serve with quick cooking minute rice, if desired.
