Instructions

1. Begin by soaking the raisins in the dark rum for a minimum of 4 hours or overnight to plump them up.
2. Combine the dried coconut with the milk, and set the mixture aside to infuse.
3. In a large skillet, heat 1 tablespoon of vegetable oil and sear the cubed chicken until golden brown; then, remove it from the pan.
4. Add the remaining tablespoon of oil to the skillet. Introduce the chopped onion, butternut squash, finely chopped garlic, scotch bonnet pepper, and a pinch of salt and pepper. Sauté the mixture over medium heat for approximately 5 minutes.
5. Incorporate the ground ginger and curry powder into the skillet. Stir and cook for an additional 5 minutes to enhance the flavors.
6. Mix in the strips of sweet bell peppers, the coconut milk mixture, and enough chicken stock to create a luscious sauce. Return the seared chicken to the skillet.
7. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.
8. After simmering, add the plump rum-soaked raisins and the cubes of fresh mango to the skillet.
9. Warm the dish through, then finish with a splash of bright lime juice. Taste and adjust seasonings as needed.
