Exotic Mango Chicken Delight

1 | red bell peppers or 1 yellow bell pepper, cut into short strips |

1 | mango, cut into cubes |

Instructions
1. | Begin by soaking the raisins in the dark rum for a minimum of 4 hours or overnight to plump them up. |

3. | In a large skillet, heat 1 tablespoon of vegetable oil and sear the cubed chicken until golden brown; then, remove it from the pan. |

6. | Mix in the strips of sweet bell peppers, the coconut milk mixture, and enough chicken stock to create a luscious sauce. Return the seared chicken to the skillet. |
7. | Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 15 minutes to allow the flavors to meld. |
8. | After simmering, add the plump rum-soaked raisins and the cubes of fresh mango to the skillet. |
