Instructions
1. | Begin by browning the boneless, skinless chicken thighs in a deep frying pan with a touch of vegetable oil. |

3. | In the same pan, saute the chopped onion and green pepper until they are soft. Add the minced garlic and continue to saute for an additional minute. |

5. | Add the browned chicken back into the pan along with the cooked and cubed new potatoes, green peas, and the well-shaken can of coconut milk. Let the curry simmer for about 10 minutes or until the sauce reaches your desired thickness. |
