4 cut into bite-sized pieces
1 tablespoon vegetable oil
1 chopped
2 minced
1 chopped
2 tablespoons I use Patak's Curry Paste
5-6 cooked & cubed
1 cup frozen green peas
1 well shaken

Instructions

    1. Begin by browning the boneless, skinless chicken thighs in a deep frying pan with a touch of vegetable oil.
    2. Once the chicken is browned, remove it from the pan and keep it warm.
    3. In the same pan, saute the chopped onion and green pepper until they are soft. Add the minced garlic and continue to saute for an additional minute.
    4. Stir in the fragrant medium curry paste and let it cook for 3-4 minutes, allowing the flavors to meld together.
    5. Add the browned chicken back into the pan along with the cooked and cubed new potatoes, green peas, and the well-shaken can of coconut milk. Let the curry simmer for about 10 minutes or until the sauce reaches your desired thickness.
    6. Once ready, serve the aromatic chicken curry over a bed of fluffy rice.
