- Begin by browning the boneless, skinless chicken thighs in a deep frying pan with a touch of vegetable oil.
- Once the chicken is browned, remove it from the pan and keep it warm.
- In the same pan, saute the chopped onion and green pepper until they are soft. Add the minced garlic and continue to saute for an additional minute.
- Stir in the fragrant medium curry paste and let it cook for 3-4 minutes, allowing the flavors to meld together.
- Add the browned chicken back into the pan along with the cooked and cubed new potatoes, green peas, and the well-shaken can of coconut milk. Let the curry simmer for about 10 minutes or until the sauce reaches your desired thickness.
- Once ready, serve the aromatic chicken curry over a bed of fluffy rice.
