A delicious and flavorful baked cod recipe inspired by the flavors of Nantucket, featuring juicy tomatoes and savory parmesan cheese.

Ingredients

4 tablespoons olive oil
4 fresh cod fish fillets
2 tablespoons lemon juice
12 teaspoon salt
12 teaspoon black pepper
14 teaspoon smoked paprika
18 teaspoon cayenne pepper
8 thin slices tomatoes
3 tablespoons grated parmesan cheese
2 tablespoons fresh parsley (for serving)

Instructions

    1. Preheat the oven to 425 degrees Fahrenheit.
    2. Begin by drizzling 2 tablespoons of olive oil on the bottom of a 9x13-inch baking dish. Place the fresh cod fish fillets in the dish and carefully turn them over to ensure both sides are coated with the oil. Drizzle the fillets with lemon juice.
    3. In a small bowl, mix together the salt, black pepper, smoked paprika, and cayenne pepper. Sprinkle this flavorful seasoning mixture over the fish.
    4. Layer each fillet with two slices of tomatoes, slightly overlapping them. Drizzle the remaining 2 tablespoons of olive oil over the tomatoes and sprinkle with the grated parmesan cheese. Bake the dish until the fish is cooked through and opaque, approximately 10 minutes.
    5. Switch on the broiler and broil the top of the dish for about 1 minute to lightly brown the tomatoes and cheese. Once done, remove the dish from the oven, and garnish with fresh parsley. Serve with lemon wedges for a burst of citrus flavor.
