Succulent Lemon Garlic Chicken Skewers

2 | tablespoons Dijon mustard |

1. | Soak wooden skewers in water for 10 minutes. |
2. | Preheat the grill to medium heat. |
Assembly and Grilling | |
1. | Thread chicken and red bell peppers alternately onto skewers. |
2. | In a medium bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, and tarragon. Set aside 1/3 cup of the mixture. |
3. | Oil the grill grates. Brush the skewers with some of the olive oil mixture and place them on the grill. |
4. | Grill the skewers, rotating every 3-4 minutes and basting frequently with the olive oil mixture, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), about 10-15 minutes. |
5. | Remove the skewers from the grill. Serve them drizzled with the reserved olive mixture over a bed of your favorite rice or couscous. Garnish with lemon wedges, if desired. |
