2 | lbs boneless skinless chicken breasts, cut into 1-inch chunks |
4 | large red bell peppers, cut into 1-inch pieces |
3 | cloves garlic, minced |
1 | cup olive oil |
5 | tablespoons lemon juice |
1 | teaspoon lemon zest |
2 | tablespoons Dijon mustard |
1 ½ | teaspoons tarragon leaves |

Preparation
- Soak wooden skewers in water for 10 minutes.
- Preheat the grill to medium heat.

Assembly and Grilling
- Thread chicken and red bell peppers alternately onto skewers.
- In a medium bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, and tarragon. Set aside 1/3 cup of the mixture.
- Oil the grill grates. Brush the skewers with some of the olive oil mixture and place them on the grill.
- Grill the skewers, rotating every 3-4 minutes and basting frequently with the olive oil mixture, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), about 10-15 minutes.
- Remove the skewers from the grill. Serve them drizzled with the reserved olive mixture over a bed of your favorite rice or couscous. Garnish with lemon wedges, if desired.
