2 lbs boneless skinless chicken breasts, cut into 1-inch chunks
4 large red bell peppers, cut into 1-inch pieces
3 cloves garlic, minced
1 cup olive oil
5 tablespoons lemon juice
1 teaspoon lemon zest
2 tablespoons Dijon mustard
1 ½ teaspoons tarragon leaves

  • Preparation

    1. Soak wooden skewers in water for 10 minutes.
    2. Preheat the grill to medium heat.
  • Assembly and Grilling

    1. Thread chicken and red bell peppers alternately onto skewers.
    2. In a medium bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, and tarragon. Set aside 1/3 cup of the mixture.
    3. Oil the grill grates. Brush the skewers with some of the olive oil mixture and place them on the grill.
    4. Grill the skewers, rotating every 3-4 minutes and basting frequently with the olive oil mixture, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), about 10-15 minutes.
    5. Remove the skewers from the grill. Serve them drizzled with the reserved olive mixture over a bed of your favorite rice or couscous. Garnish with lemon wedges, if desired.
