Ingredients

1 peeled banana, split into three sections as per note
2 Italian-style bread slices, 1.5cm thick (gluten-free equivalent)
1 tablespoon light crunchy peanut butter
1 teaspoon honey
teaspoon a pinch of cinnamon
extra honey for drizzling (optional)

Instructions

For the toast

1. Split the banana into three sections by gently pressing down the middle of the peeled banana.
2. Preheat the griller/broiler to medium heat.
3. Cut the banana in half crossways to create six pieces.
4. Place the bread slices on a baking tray and toast under the griller/broiler for 1 to 2 minutes, or until one side is toasted.
5. Spread the crunchy peanut butter on the untoasted side of each slice.
6. Top each slice with three pieces of banana, then brush the banana with honey.
7. Return the slices under the griller/broiler for 2 minutes, or until the banana is lightly browned.
