Ingredients

For Blueberry-Ginger Chutney

2 fresh blueberries or frozen blueberries
1 cup packed brown sugar
1 cup finely chopped onion
1 cup golden raisins
3 tablespoons cider vinegar
1 12 teaspoons grated peeled fresh ginger
14 teaspoon salt
14 teaspoon ground cinnamon
18 teaspoon crushed red pepper flakes
ground cloves (a dash)
2 minced garlic cloves

For Chicken Marinade

1 12 tablespoons olive oil
34 teaspoon dried basil
34 teaspoon dried oregano
6 (6 ounce) boneless skinless chicken breast halves
3 minced garlic cloves
34 teaspoon salt
14 teaspoon fresh ground black pepper

Instructions

  • For Chutney and Chicken

    1. Combine all the chutney ingredients in a medium saucepan; bring to a boil, then lower heat to medium-low and simmer for 25 minutes or until thick, stirring occasionally.
    2. In a large heavy-duty zip-lock plastic bag, combine olive oil, basil, oregano, chicken, and minced garlic; seal the bag and marinate in the refrigerator for 2 hours, turning occasionally.
    3. Remove chicken from the bag and discard marinade. Sprinkle chicken with salt and pepper.
    4. Heat a large grill pan over medium-high heat. Cook chicken for 5 minutes on each side or until done. Serve with the blueberry-ginger chutney.
