Instructions
For Chutney and Chicken | |

1. | Combine all the chutney ingredients in a medium saucepan; bring to a boil, then lower heat to medium-low and simmer for 25 minutes or until thick, stirring occasionally. |
2. | In a large heavy-duty zip-lock plastic bag, combine olive oil, basil, oregano, chicken, and minced garlic; seal the bag and marinate in the refrigerator for 2 hours, turning occasionally. |
3. | Remove chicken from the bag and discard marinade. Sprinkle chicken with salt and pepper. |
4. | Heat a large grill pan over medium-high heat. Cook chicken for 5 minutes on each side or until done. Serve with the blueberry-ginger chutney. |
