1 | cup crumbled pork sausage, fully cooked and drained well |
2 | cups shredded cheddar cheese |
4 | cups shredded Monterey Jack cheese |

1. | In a skillet, sauté the sliced mushrooms and chopped green onions in 1 tablespoon of butter until tender. Set aside. |
2. | In the same skillet, brown and crumble the pork sausage. Drain well on paper towels. |
3. | In a large bowl, combine the all-purpose flour, baking powder, and salt. |
4. | In another bowl, combine the lightly beaten eggs and shredded Monterey Jack and cheddar cheeses. |
5. | Melt the remaining 1/2 cup of butter and add it to the egg and cheese mixture. |
6. | Stir the egg and cheese mixture into the dry ingredients, along with the sausage crumbles and mushroom mixture. |
7. | Fill greased muffin cups three-fourths full with the mixture. |
8. | Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean. |
9. | Carefully run a knife around the edge of each muffin cup before removing the puffs. |
