Honey is the only sweetener in this banana bread — no refined sugar in the batter, just ripe bananas and honey doing the work, with vegetable oil keeping the crumb moist. Both baking powder and baking soda go in, so the loaf rises tall despite the heavy fruit. Twelve servings from a single hour, start to finish.

| 1. | Preheat the oven to 325 degrees Fahrenheit. |

| 2. | In a large bowl, place the ripe bananas and thoroughly mash them with a fork. Add honey, milk, egg, and vegetable oil. Stir well to combine. |
| 3. | Add the all-purpose flour, baking powder, baking soda, and salt. Stir the mixture only until all ingredients are combined. |
| 4. | Pour the batter into a greased loaf pan and bake for 55-60 minutes, or until a toothpick or wooden skewer inserted into the bread comes out clean. |
| 5. | Allow the banana bread to cool in the pan for about 10 minutes before gently inverting it onto a wire rack to cool completely. |
