This is the sauce that turns pancakes into an occasion. Blueberries cook down with brown sugar, fresh lemon, and a warm-spice trio of cinnamon, nutmeg and clove until glossy and just thick enough to coat a spoon. The three-cup batch is deliberate: it keeps in the fridge and moves effortlessly from waffles to cheesecake to roast pork, where the spice does its quiet best work.
