A delectable breakfast dish made from leftover bratwurst, potatoes, peppers, onions, and eggs.

Ingredients

2 red potatoes, cubed
1 bratwurst, leftover from beer boil and grill, cubed
12 bell pepper, leftover from beer boil, chopped
12 small onion, leftover from beer boil, chopped
3 tablespoons vegetable oil
18 teaspoon chili powder (to taste)
18 teaspoon garlic powder (to taste)
18 teaspoon onion powder (to taste)
18 teaspoon paprika (to taste)
8 eggs, cracked and beaten

Instructions

1. Begin by pricking the red potatoes multiple times with a fork. Cook them in the microwave for 3 minutes, then turn and cook for an additional 2 minutes. Allow them to cool before cutting them into 1/2 inch cubes.
2. Cut the leftover bratwurst into 1/2 inch cubes.
3. Roughly chop the leftover bell pepper and small onion.
4. In a pan, heat vegetable oil over medium heat. Add the potatoes, bratwurst, peppers, onions, chili powder, garlic powder, onion powder, and paprika. Cook for about 5 minutes, turning the mixture frequently. Season with salt and pepper.
5. Push the potato mixture to the side of the pan. Scramble the eggs in the empty space, lightly incorporating the potato mixture as the eggs near completion.
6. For an extra kick, top the dish with a bit of hot sauce if desired.
