Chef's Bratwurst Scramble Delight
A delectable breakfast dish made from leftover bratwurst, potatoes, peppers, onions, and eggs.
Ingredients
2 | red potatoes, cubed |

1 | bratwurst, leftover from beer boil and grill, cubed |
1⁄2 | bell pepper, leftover from beer boil, chopped |
1⁄2 | small onion, leftover from beer boil, chopped |
3 | tablespoons vegetable oil |
1⁄8 | teaspoon chili powder (to taste) |
1⁄8 | teaspoon garlic powder (to taste) |
1⁄8 | teaspoon onion powder (to taste) |
1⁄8 | teaspoon paprika (to taste) |
8 | eggs, cracked and beaten |
Instructions
1. | Begin by pricking the red potatoes multiple times with a fork. Cook them in the microwave for 3 minutes, then turn and cook for an additional 2 minutes. Allow them to cool before cutting them into 1/2 inch cubes. |

2. | Cut the leftover bratwurst into 1/2 inch cubes. |
3. | Roughly chop the leftover bell pepper and small onion. |
4. | In a pan, heat vegetable oil over medium heat. Add the potatoes, bratwurst, peppers, onions, chili powder, garlic powder, onion powder, and paprika. Cook for about 5 minutes, turning the mixture frequently. Season with salt and pepper. |
5. | Push the potato mixture to the side of the pan. Scramble the eggs in the empty space, lightly incorporating the potato mixture as the eggs near completion. |
6. | For an extra kick, top the dish with a bit of hot sauce if desired. |
