Ingredients

2 brown rice cakes, broken into crumbs
1 ½ crunchy (all-natural) peanut butter
1 teaspoon vanilla extract
1 tablespoon maple syrup
12 (12 ounce) 60% dark chocolate chips

Instructions

    1. Prepare a baking sheet by lining it with parchment paper.
    2. In a medium-sized bowl, combine brown rice cake crumbs, crunchy peanut butter, vanilla extract, and maple syrup. Mix thoroughly using a rubber spatula.
    3. Using a 1-inch cookie scoop, form the mixture into balls and place them on the prepared baking sheet. Set aside.
    4. In another medium-sized bowl, place the dark chocolate chips and microwave for 30 seconds on high. Stir well. Repeat the process until the chocolate is almost melted. Be cautious not to overheat the chocolate. The chocolate should feel neutral in temperature. Stir continuously for several minutes to ensure the chocolate is completely melted and at the right temperature. If it feels too warm, continue stirring. The chocolate will thicken as it cools.
    5. Using a fork, dip each peanut butter ball into the tempered chocolate. Lightly tap the fork against the side of the bowl to remove any excess chocolate. Then, place the chocolate-coated balls on the parchment-lined baking sheet. Allow the chocolate to set completely, which usually takes several minutes.
