2 | warm water |
1⁄2 | cup packed brown sugar |
4 1⁄2 | teaspoons active dry yeast |
1⁄2 | cup canola oil |
5 | cups all-purpose flour |
1 1⁄2 | teaspoons salt |
1 | cup white sugar |
2 | teaspoons ground cinnamon |
1 | tablespoon canola oil, or as needed |
1 | cup confectioners' sugar |
2 | teaspoons milk |

For the Dough
- Combine warm water, brown sugar, and yeast in a large mixing bowl and let rest until frothy, about 10 minutes. Add canola oil and stir. Set aside.
- Sift together all-purpose flour and salt in a separate bowl.
- Mix the flour mixture into the yeast mixture and knead until dough forms a sticky ball. Transfer the dough to an oiled bowl, turning to coat. Cover the bowl and allow the dough to rest in a warm place until doubled in size, approximately 1 hour.

- In a bowl, mix white sugar and ground cinnamon together.
- Preheat the oven to 350°F (175°C) and oil a fluted tube pan like a Bundt® pan.
- Punch down the risen dough, roll it into 1-inch balls, roll the balls in the cinnamon-sugar mixture, and arrange in a single layer in the prepared tube pan. Sprinkle with additional cinnamon sugar and drizzle with a little canola oil. Continue layering with the remaining dough balls and cinnamon sugar.
- Bake in the preheated oven until puffed up, about 25 minutes.
- Meanwhile, in a bowl, mix confectioners' sugar and milk to make the glaze. Drizzle the glaze generously over the warm monkey bread.
