For the Dough

2 warm water
12 cup packed brown sugar
4 12 teaspoons active dry yeast
12 cup canola oil
5 cups all-purpose flour
1 12 teaspoons salt
1 cup white sugar
2 teaspoons ground cinnamon
1 tablespoon canola oil, or as needed
1 cup confectioners' sugar
2 teaspoons milk

Instructions

  • For the Dough

    1. Combine warm water, brown sugar, and yeast in a large mixing bowl and let rest until frothy, about 10 minutes. Add canola oil and stir. Set aside.
    2. Sift together all-purpose flour and salt in a separate bowl.
    3. Mix the flour mixture into the yeast mixture and knead until dough forms a sticky ball. Transfer the dough to an oiled bowl, turning to coat. Cover the bowl and allow the dough to rest in a warm place until doubled in size, approximately 1 hour.
    1. In a bowl, mix white sugar and ground cinnamon together.
    2. Preheat the oven to 350°F (175°C) and oil a fluted tube pan like a Bundt® pan.
    3. Punch down the risen dough, roll it into 1-inch balls, roll the balls in the cinnamon-sugar mixture, and arrange in a single layer in the prepared tube pan. Sprinkle with additional cinnamon sugar and drizzle with a little canola oil. Continue layering with the remaining dough balls and cinnamon sugar.
    4. Bake in the preheated oven until puffed up, about 25 minutes.
    5. Meanwhile, in a bowl, mix confectioners' sugar and milk to make the glaze. Drizzle the glaze generously over the warm monkey bread.
