This monkey bread is made from a simple yeast dough cut into small pieces, coated in cinnamon sugar, and baked in a Bundt pan until pull-apart tender. A little melted butter helps the coating turn sticky around the edges, while a simple powdered sugar glaze finishes the warm loaf.

Ingredients

For the Dough

2
cups water, warm
12
cup brown sugar, packed
4 12
teaspoons active dry yeast
12
cup canola oil
5
cups all-purpose flour
1 12
teaspoons salt

For the Cinnamon Coating

1

2
teaspoons ground cinnamon
12
cup unsalted butter, melted

For the Glaze

1
cup powdered sugar
1
-
2
tablespoons milk

Instructions

1. Stir the warm water, brown sugar, and yeast together in a large bowl and let stand until foamy, about 10 minutes.
2. Stir the canola oil into the yeast mixture.
3. Whisk the flour and salt together in a separate bowl.
4. Add the flour mixture to the yeast mixture and knead until a soft, slightly sticky dough forms.
5. Place the dough in a lightly oiled bowl, turn to coat, cover, and let rise in a warm place until doubled, about 1 hour.
6. Grease a 10-inch fluted tube pan and heat the oven to 350°F.
7. Mix the granulated sugar and cinnamon in a shallow bowl and place the melted butter in a second shallow bowl.
8. Punch down the dough, pinch it into 1-inch pieces, dip each piece in melted butter, and roll it in the cinnamon sugar.
9. Layer the coated dough pieces evenly in the prepared pan, sprinkling any remaining cinnamon sugar between layers.
10. Bake until the bread is puffed, deeply golden, and cooked through in the center, 30 to 35 minutes.
11. Let the bread cool in the pan for 10 minutes, then invert it onto a serving plate.
12. Whisk the powdered sugar with 1 tablespoon milk, adding more milk a little at a time until pourable, then drizzle the glaze over the warm monkey bread.
