Recipe

This monkey bread is made from a simple yeast dough cut into small pieces, coated in cinnamon sugar, and baked in a Bundt pan until pull-apart tender. A little melted butter helps the coating turn sticky around the edges, while a simple powdered sugar glaze finishes the warm loaf.
For the Dough | |
|---|---|
2 | cups water, warm |
1⁄2 | cup brown sugar, packed |
4 1⁄2 | teaspoons active dry yeast |
1⁄2 | cup canola oil |
5 | cups all-purpose flour |
1 1⁄2 | teaspoons salt |
For the Cinnamon Coating | |
1 | cup granulated sugar |
2 | teaspoons ground cinnamon |
1⁄2 | cup unsalted butter, melted |
For the Glaze | |
1 | cup powdered sugar |
1 -2 | tablespoons milk |
| 1. | Stir the warm water, brown sugar, and yeast together in a large bowl and let stand until foamy, about 10 minutes. |
|---|---|
| 2. | Stir the canola oil into the yeast mixture. |
| 3. | Whisk the flour and salt together in a separate bowl. |
| 4. | Add the flour mixture to the yeast mixture and knead until a soft, slightly sticky dough forms. |
| 5. | Place the dough in a lightly oiled bowl, turn to coat, cover, and let rise in a warm place until doubled, about 1 hour. |
| 6. | Grease a 10-inch fluted tube pan and heat the oven to 350°F. |
| 7. | Mix the granulated sugar and cinnamon in a shallow bowl and place the melted butter in a second shallow bowl. |
| 8. | Punch down the dough, pinch it into 1-inch pieces, dip each piece in melted butter, and roll it in the cinnamon sugar. |
| 9. | Layer the coated dough pieces evenly in the prepared pan, sprinkling any remaining cinnamon sugar between layers. |
| 10. | Bake until the bread is puffed, deeply golden, and cooked through in the center, 30 to 35 minutes. |
| 11. | Let the bread cool in the pan for 10 minutes, then invert it onto a serving plate. |
| 12. | Whisk the powdered sugar with 1 tablespoon milk, adding more milk a little at a time until pourable, then drizzle the glaze over the warm monkey bread. |
