These Belgian-style waffles use whipped egg whites and a rich milk-and-butter batter for a crisp outside and tender, airy center. The method keeps the familiar home-cook version of the dish while tightening the mixing and cooking steps for better texture.

Ingredients

For the waffles

2
cups all-purpose flour
14
cup granulated sugar
4
teaspoons baking powder
12
teaspoon salt
2
egg, separated
2
cups whole milk
12
cup unsalted butter, melted and slightly cooled
1
teaspoon vanilla extract

Instructions

1. Preheat a Belgian waffle iron according to the manufacturer's directions.
2. Whisk the flour, sugar, baking powder, and salt together in a large bowl.
3. Whisk the egg yolks, milk, melted butter, and vanilla together in a separate bowl until smooth.
4. Beat the egg whites in a clean bowl until they hold stiff peaks.
5. Pour the milk mixture into the flour mixture and stir just until no dry streaks remain.
6. Fold the beaten egg whites into the batter gently, stopping while the batter is still light and slightly lumpy.
7. Brush or spray the hot waffle iron lightly with oil if needed.
8. Add enough batter to fill the iron without overflowing, close the lid, and cook until the waffle is deep golden and crisp.
9. Repeat with the remaining batter, keeping finished waffles warm in a low oven if serving all at once.
