Classic Chicken Kapama

1⁄8 | cup tomato paste |
1⁄4 | cup dry white wine |

Instructions

- Preheat the oven to 350F.
- Arrange the chicken pieces in a single layer in a baking dish.
- Cover the chicken with fresh lemon juice, salt, and pepper.
- Allow the chicken to marinate at room temperature for 1 hour, turning occasionally.
- In a large saucepan, combine the dried red chili, ground allspice, crumbled oregano, cinnamon stick, bay leaf, peppercorns, cloves, chopped tomatoes, water, tomato paste, white wine, olive oil, and butter.
- Bring the sauce to a boil over medium heat, then simmer until thickened, stirring occasionally, for about 40 minutes.
- In a large skillet, heat oil and butter over medium-high heat.
- Remove the chicken from the marinade, pat dry, and brown on all sides in the skillet.
- Transfer the browned chicken back to the baking dish.
- Pour the prepared sauce over the chicken, cover with foil, and bake for approximately 40 minutes or until the chicken is tender.
- Before serving, discard the whole spices and enjoy the flavorful sauce.
- This dish pairs wonderfully with buttered pasta such as penne or rigatoni.
