Ingredients

4 beef tenderloin, filets 2 inches thick
2 tablespoons olive oil

Instructions

    1. Preheat the oven to 425 degrees Fahrenheit.
    2. Season the beef tenderloin filets with kosher salt and freshly ground black pepper.
    3. Heat an oven-proof pan over medium-high heat for 5 minutes.
    4. Add olive oil and heat briefly.
    5. Sear the beef tenderloin filets in olive oil on one side for 4-5 minutes. Turn them over, place the pan in the oven, and roast to the desired doneness. (For medium rare, that would be approximately 7 minutes).
    6. Allow the beef tenderloin filets to rest for 5 minutes before serving.
