For the steak

1 boneless rib-eye steak (1 ½-inch thick)
1 teaspoon smoked sweet paprika
1 teaspoon kosher salt (if using kosher meat) or ½ kosher salt (if you're using non-kosher meat)
1 teaspoon fresh ground black pepper
1 teaspoon olive oil

Instructions

  • For the steak

    1. Bring the rib-eye steak to room temperature.
    2. Create a thick paste by mixing the smoked sweet paprika, kosher salt, fresh ground black pepper, and olive oil. Rub the spice mixture onto both sides of the steak.
    3. Optional: For enhanced flavor, wrap the seasoned steak with plastic wrap and allow it to rest at room temperature for 15 minutes or longer.
    4. Preheat a 10 to 12-inch cast iron skillet in the oven at 500 degrees Fahrenheit. Once the oven reaches 500 degrees, quickly transfer the hot skillet to a stovetop burner on high heat.
    5. Immediately place the seasoned steak in the center of the skillet. Sear for 30 seconds without moving, then flip with tongs and sear for an additional 30 seconds on the other side. Remove the skillet from the heat and place it back in the oven.
    6. Cook the steak for two minutes on each side for a medium rare doneness, or three minutes on each side for a medium doneness. Transfer the steak to a wooden cutting board and loosely tent it with aluminum foil. Allow it to rest for a few minutes before slicing and serving.
