Ingredients

1 ½ lb flank steak (can use skirt steak)
8 ounces cream cheese, softened
8 ounces frozen spinach, defrosted and squeezed dry
garlic powder
salt
pepper
onion powder
1 tablespoon cornstarch
½ cup water
8 ounces beef stock
½ cup red wine

Instructions

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. Place the flank steak flat on a cutting board and season generously with salt and pepper.
    3. Spread softened cream cheese over one side of the steak, season with garlic powder, onion powder, salt, and pepper.
    4. Layer spinach over the cream cheese side, then fold the other half of the steak over.
    5. Transfer the stuffed steak to a baking sheet, pour beef stock and red wine over the top. Bake for 60 minutes, adding more stock if needed.
    6. Once cooked, let the steak rest on a cutting board. Pour the drippings into a pan, whisk in a mixture of water and cornstarch. Bring to a boil and cook until the gravy reaches desired thickness.
    7. Serve slices of the stuffed steak with the prepared gravy. Note: Cutting this steak can be challenging due to the filling.
