Instructions
1. | Begin by trimming the fat from the beef and cutting it with the grain into 2-inch strips. |

2. | Then, cut the strips across the grain into 1/8-inch slices. |
3. | In a glass or plastic bowl, toss the beef with 1 tablespoon of vegetable oil, 1 teaspoon of cornstarch, 1 teaspoon of salt, sugar, soy sauce, and white pepper. Cover and refrigerate for 30 minutes. |
4. | Next, separate the bok choy leaves from the stems. Cut the leaves into 2-inch pieces and the stems diagonally into 1/4-inch slices, ensuring not to combine them. |
5. | Cut the green onions into 2-inch pieces. |
6. | Mix 2 tablespoons of cornstarch with water. |
