3 | tablespoons vegetable oil |
½ | teaspoon salt |
½ | cup chicken broth |
2 | tablespoons oyster sauce or 1 tablespoon dark soy sauce |
Instructions

- Begin by trimming the fat from the beef and cutting it with the grain into 2-inch strips.
- Then, cut the strips across the grain into 1/8-inch slices.
- In a glass or plastic bowl, toss the beef with 1 tablespoon of vegetable oil, 1 teaspoon of cornstarch, 1 teaspoon of salt, sugar, soy sauce, and white pepper. Cover and refrigerate for 30 minutes.
- Next, separate the bok choy leaves from the stems. Cut the leaves into 2-inch pieces and the stems diagonally into 1/4-inch slices, ensuring not to combine them.
- Cut the green onions into 2-inch pieces.
- Mix 2 tablespoons of cornstarch with water.
- Heat a wok until 1 or 2 drops of water bubble and skitter when sprinkled in the wok.
- Add 3 tablespoons of vegetable oil and rotate the wok to coat the sides. Stir-fry the beef, gingerroot, and garlic until the beef is browned, approximately 3 minutes. Remove the beef from the wok.
- Add another 3 tablespoons of vegetable oil to the wok and stir-fry the bok choy stems for 1 minute.
- Stir in the bok choy leaves and 1/8 teaspoon of salt.
- Pour in the chicken broth and bring it to a boil.
- Add the cornstarch mixture and cook until thickened, about 15 seconds.
- Stir in the beef and oyster sauce, heating it to boiling.
- Garnish with green onions before serving.
