Ingredients

1 lb beef flank steak or 1 boneless sirloin steak
1 tablespoon vegetable oil
1 teaspoon cornstarch
1 teaspoon salt
1 teaspoon sugar
1 teaspoon soy sauce (light or dark)
teaspoon white pepper
1 lb bok choy (about 7 large stalks)
2 green onions (with tops)
2 tablespoons cornstarch
2 tablespoons cold water
3 tablespoons vegetable oil
1 teaspoon gingerroot, finely chopped
1 teaspoon garlic, finely chopped
3 tablespoons vegetable oil
½ teaspoon salt
½ cup chicken broth
2 tablespoons oyster sauce or 1 tablespoon dark soy sauce

Instructions

    1. Begin by trimming the fat from the beef and cutting it with the grain into 2-inch strips.
    2. Then, cut the strips across the grain into 1/8-inch slices.
    3. In a glass or plastic bowl, toss the beef with 1 tablespoon of vegetable oil, 1 teaspoon of cornstarch, 1 teaspoon of salt, sugar, soy sauce, and white pepper. Cover and refrigerate for 30 minutes.
    4. Next, separate the bok choy leaves from the stems. Cut the leaves into 2-inch pieces and the stems diagonally into 1/4-inch slices, ensuring not to combine them.
    5. Cut the green onions into 2-inch pieces.
    6. Mix 2 tablespoons of cornstarch with water.
    7. Heat a wok until 1 or 2 drops of water bubble and skitter when sprinkled in the wok.
    8. Add 3 tablespoons of vegetable oil and rotate the wok to coat the sides. Stir-fry the beef, gingerroot, and garlic until the beef is browned, approximately 3 minutes. Remove the beef from the wok.
    9. Add another 3 tablespoons of vegetable oil to the wok and stir-fry the bok choy stems for 1 minute.
    10. Stir in the bok choy leaves and 1/8 teaspoon of salt.
    11. Pour in the chicken broth and bring it to a boil.
    12. Add the cornstarch mixture and cook until thickened, about 15 seconds.
    13. Stir in the beef and oyster sauce, heating it to boiling.
    14. Garnish with green onions before serving.
