Ingredients

2 garlic cloves, minced
2 onions, sliced
2 green bell peppers, sliced
1 (15 ½ ounce) can tomatoes, chopped
¼ cup flour
salt to taste
fresh ground pepper to taste
2 beef round tip steaks (¾-inch thick), sliced
3 tablespoons oil
1 cup beef stock or broth

Instructions

    1. Begin by draining the tomatoes, ensuring to reserve the liquid for later use.
    2. Chop the tomatoes into bite-sized pieces.
    3. In a bowl, combine the flour, 1 teaspoon of salt, and 1/4 teaspoon of freshly ground pepper.
    4. Slice the beef round tip steaks into serving pieces.
    5. Coat the steaks with the seasoned flour mixture, then gently pound them until slightly flattened.
    6. In a large frying pan, heat the oil over medium heat. Add the steaks and cook until browned on both sides, typically taking 10 to 12 minutes in total.
    7. Add the minced garlic, sliced onions, sliced green bell peppers, chopped tomatoes with their reserved liquid, and the beef stock or broth to the pan.
    8. Bring the mixture to a gentle boil, then cover the pan, reduce the heat, and allow it to simmer until the steaks are tender, which usually takes about 3 1/2 hours.
