2 tablespoons butter
2 tablespoons olive oil
1 ¾ cup onions, chopped
6 large garlic cloves, minced
2 tablespoons flour
1 ½ cup chicken stock (or canned low-salt chicken broth)
1 ½ cup whipping cream
1 package fresh spinach leaves
1 cup parmesan cheese (packed)
1 ¼ cup sour cream
1 ½ teaspoon cayenne pepper

Instructions

Preparing the Dip

1. Melt butter with olive oil in a heavy large pot over medium heat. Add chopped onions and minced garlic; sauté until onions are tender, about 6 minutes.
2. Add flour; stir for 2 minutes. Gradually whisk in chicken stock and whipping cream; bring to a boil, whisking constantly. Cook until the mixture thickens, stirring frequently, about 2 minutes.
3. Remove from heat. Stir in fresh spinach leaves, Parmesan cheese, sour cream, and cayenne pepper (spinach will wilt).
