This creamy tomato soup is a simple stovetop version made with ripe tomatoes, broth, and a small amount of light cream. A short simmer softens the vegetables before blending, giving the soup a smooth body while keeping the tomato flavor fresh.

4 | cups tomato, ripe, peeled, seeded, and chopped |
1⁄3 | cup sweet onion, coarsely chopped |
1⁄2 | cup celery, coarsely chopped |
1⁄2 | teaspoon granulated sugar |
1⁄2 | cup light cream |
1 | tablespoon fresh basil, chopped, optional |

| 1. | Combine the chicken broth, tomatoes, onion, celery, and sugar in a large saucepan. |
