The batter here is the diner kind: egg, flour, milk and seasoning salt whisked smooth, thick enough to cling and thin enough to fry lacy. 1 | egg, beaten |

Preparation of Batter-Fried Shrimp | |

| 1. | Preheat the frying oil to 350°F (175°C). |
| 2. | In a bowl, combine ½ cup of oil with the beaten egg, and mix well. Add the remaining ingredients except the oil for frying, and stir until the batter is well blended. |
| 3. | Dip the peeled and deveined shrimp into the batter to coat them evenly. Carefully drop the shrimp into the hot oil and fry for 30-60 seconds, or until they turn a beautiful golden brown. Remove the fried shrimp with a slotted spoon and allow them to drain on a paper towel. |
