Grecian Delight Pork Empanadas

1 | teaspoon all purpose Greek seasoning |
1⁄2 | cup fresh parsley, finely chopped |
1⁄3 | cup finely grated Parmesan cheese |
1⁄3 | cup crumbled feta cheese |
1⁄4 | teaspoon cayenne pepper |
2 | tablespoons Greek yogurt |
1 | tablespoon chopped kalamata olive |
1 | teaspoon Sicilian sea salt, divided |
1⁄2 | teaspoon cracked black pepper, divided |

1. | Set your oven to preheat at 400°F, then line two cookie sheets with parchment paper and set aside. |
2. | In a medium nonstick skillet, heat a tablespoon of extra virgin olive oil over medium heat. Add the fresh ground pork and cook until thoroughly done, which should take around 6-8 minutes. |
3. | Next, roll out the refrigerated pizza dough on a clean work space and flatten it until it's about 1/4 inch thick. Cut into six equal squares. In a large bowl, mix the cooked pork, chopped bell pepper, minced shallots, chopped artichoke hearts, Greek seasoning, parsley, Parmesan, feta cheese, cayenne pepper, Greek yogurt, kalamata olives, Sicilian sea salt, and cracked black pepper. Place two tablespoons of this mixture on each pizza dough square. Fold each square into half diagonally to form a triangle, pressing the edges to seal with a fork. Transfer the prepared empanadas to the cookie sheets, spray them with the olive oil cooking spray and sprinkle Sicilian sea salt and cracked black pepper. Bake for 12 to 15 minutes until golden brown. Serve the Grecian Delight Pork Empanadas with the remaining ranch dressing for an amazing dip. |
