    1. Rinse the jasmine rice thoroughly in cold water.
    2. In a heavy saucepan, combine the rice, vegetable stock (or chicken stock), olive oil, and lemon zest.
    3. Bring the mixture to a boil over high heat, then stir, reduce the heat to a simmer, cover tightly, and cook for 10 minutes.
    4. Uncover the saucepan and gently place the shredded baby spinach on top of the rice without stirring.
    5. Cover the saucepan again and continue to cook for another 5 minutes.
    6. Turn off the heat, add fresh lemon juice, and let the dish stand covered for an additional 10 minutes.
