Instructions

1. In a bowl, combine white whole wheat flour, all-purpose flour, white sugar, baking powder, and salt.
2. In another bowl, mix refrigerated unsweetened coconut milk beverage, canola oil, lightly beaten large eggs, and vanilla extract.
3. Create a well in the dry ingredients and pour in the wet mixture. Gently stir until just combined, leaving the batter slightly lumpy.
4. Preheat the waffle iron following the manufacturer's directions.
