2 tablespoons instant coffee granules, processed
2 tablespoons unsweetened cocoa powder
4 ounces unsweetened chocolate
12 lb unsalted butter
4 large eggs
2 cups sugar
1 cup unbleached all-purpose flour
18 teaspoon salt
2 teaspoons pure vanilla extract

  • Preparation

    1. Preheat the oven to 350°F (180°C) and butter an 8x16-inch pan.
    2. Create the coating by mixing 1 cup of sugar, processed instant coffee granules, and unsweetened cocoa powder. Set aside.
    3. Melt the unsweetened chocolate and unsalted butter together in a heavy saucepan or microwave. In a separate bowl, beat the large eggs until light, then gradually beat in 2 cups of sugar. Stir in the chocolate mixture. Gradually fold in the unbleached flour, salt, and pure vanilla extract until fully combined. The mixture should be well incorporated, not light and fluffy. Pour the batter into the prepared pan and bake for 25 minutes. The brownies should be slightly underdone and very moist. Allow them to cool in the pan.
    4. Once the brownies have cooled, cut them into 1x1-inch squares. Roll each square in the palms of your hands to form 1-inch diameter balls. Coat the balls in the prepared mixture. Place the truffles in tins or containers with wax paper between layers and store in the refrigerator for up to a week. Alternatively, lay them on a cookie sheet in the freezer until frozen, then transfer them to containers and store in the freezer for up to 4 months.
