Instructions
1. | Prepare the rich chocolate paste by combining sugar and cake flour with egg white until smooth. Heat milk in a saucepan until simmering, then stir in cocoa powder until fully incorporated. Slowly add the egg white mixture to the cocoa milk, stirring over low heat until thickened. Incorporate butter and melted chocolate, stirring until smooth. Allow the chocolate paste to cool and refrigerate until ready to use. |

2. | Create the dough by mixing all dry ingredients in a mixer bowl, then adding milk, butter, and egg. Knead the dough for approximately 15 minutes at medium speed using the mixer. If kneading by hand, transfer the dough to a lightly floured surface and knead for about 20 minutes until the dough is smooth and gluten is fully developed. |
3. | Place the dough in a bowl, cover it with a damp towel or plastic wrap, and let it rise until doubled in volume, which should take around 2 hours depending on the temperature. Roll out the dough into a 20x30 cm rectangle, spread the chocolate paste evenly, and fold the dough lengthwise. |
4. | Cut the dough into 10 strips about 1 inch wide using a pastry cutter or sharp knife. Gently stretch each strip, twist the edges loosely in opposite directions to create a spring-like shape, then wrap it around itself and tuck the end underneath. Repeat this process for each strip. Allow the rolls to rise for about 1 hour in a draft-free area. |
5. | Preheat the oven to 180°C (350°F). Brush the buns with the reserved egg yolk mixed with 1 tbsp of water or milk. Bake for 15 minutes until golden brown. Allow the buns to cool on a rack before serving. |
