Ingredients

For the muffins

1 cup coconut flour
1 cup tapioca flour
1 teaspoon sea salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 eggs
1 cup agave nectar
14 cup coconut oil
1 12 cups grated zucchini (do not pack when measuring)
12 cup dark chocolate chips

Instructions

For preparing the muffins

1. Preheat the oven to 325°F (163°C).
2. In a medium bowl, combine the dry ingredients: coconut flour, tapioca flour, sea salt, baking soda, and cinnamon.
3. In a large bowl, combine the eggs, agave nectar, coconut oil, and grated zucchini. Ensure the coconut oil is well incorporated.
4. Gradually add the dry ingredients to the egg mixture, mixing thoroughly.
5. Spoon the batter into a non-stick muffin pan, filling each cup about two-thirds of the way full.
6. Bake in the center of the oven for approximately 45 minutes. Cover the muffins with foil halfway through baking to prevent over-browning.
7. Allow the muffins to cool before serving.
