Instructions
For preparing the muffins | |

1. | Preheat the oven to 325°F (163°C). |
2. | In a medium bowl, combine the dry ingredients: coconut flour, tapioca flour, sea salt, baking soda, and cinnamon. |
3. | In a large bowl, combine the eggs, agave nectar, coconut oil, and grated zucchini. Ensure the coconut oil is well incorporated. |
4. | Gradually add the dry ingredients to the egg mixture, mixing thoroughly. |
5. | Spoon the batter into a non-stick muffin pan, filling each cup about two-thirds of the way full. |
6. | Bake in the center of the oven for approximately 45 minutes. Cover the muffins with foil halfway through baking to prevent over-browning. |
