For pancakes

2 cups all-purpose flour
3 tablespoons cocoa powder
2 teaspoons baking powder
12 teaspoon baking soda
12 teaspoon salt
2 cups milk
2 tablespoons white vinegar
12 cup granulated sugar
2 large eggs
1 12 tablespoons red food coloring
2 teaspoons vanilla extract
13 cup salted butter, melted

For cream cheese glaze

1 recipe cream cheese glaze
fresh raspberries and mint leaf, for garnish (optional)
6 cream cheese, softened
6 tablespoons butter, softened
2 cups powdered sugar
12 cup milk, plus more if desired
12 teaspoon vanilla extract

Instructions

  • For pancakes

    1. Preheat an electric non-stick griddle to 350 degrees.
    2. In a mixing bowl, whisk together all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
    3. In a liquid measuring cup, combine milk and vinegar. Allow the mixture to rest for 2 minutes.
    4. Pour the milk mixture into a large mixing bowl. Add sugar, eggs, red food coloring, vanilla, and melted butter. Whisk until well combined.
    5. While whisking, slowly add the dry ingredients and mix just until combined.
    6. Butter the griddle if necessary. Pour about a 1/4 - 1/3 cup of batter at a time onto the hot griddle. Cook until bubbles appear on the surface, then flip and cook the other side until the pancake is cooked through.

  • Cream Cheese Glaze

    1. In a mixing bowl, using an electric hand mixer on medium speed, blend together softened cream cheese and butter until well combined and fluffy, about 2 minutes.
    2. Add the powdered sugar, milk, and vanilla extract. Mix for about 1 minute until well combined, adding more milk to thin if desired.
    3. Store the glaze in an airtight container in the refrigerator.
