1/4 | cup oil |
1/2 | teaspoon baking soda |
3/4-1 | teaspoon cinnamon |
1/4-1/2 | teaspoon nutmeg |
1/4-1/2 | teaspoon ground ginger |
Instructions
For the muffins | |

1. | Preheat the oven to 350°F (180°C). |
2. | Combine the dry ingredients and stir in the oats and diced peaches. |
3. | Whisk together the eggs, oil, and milk. Fold this mixture into the flour until just combined; avoid over-mixing, a lumpy batter is acceptable. |
4. | Divide the batter into greased muffin cups. If using muffin papers, there is no need to grease them. |
5. | Bake for 15-18 minutes or until the muffins are fully baked and lightly spring back when touched. |
6. | Note: Whole wheat pastry flour or King Arthur White Wheat Flour can be used for a lighter texture and added nutrition. Adjust the amount of blueberries to about 1 1/2 cups if preferred. |
