2 | cups whole wheat pastry flour (see note) |
3 | 4 cup sugar |
1 | tablespoon baking powder |

1 | cup oatmeal, old fashioned or 1 quick oats (not instant) |
2 | eggs |
1 | cup milk |
1/4 | cup oil |
1/2 | teaspoon baking soda |
3/4-1 | teaspoon cinnamon |
1/4-1/2 | teaspoon nutmeg |
1/4-1/2 | teaspoon ground ginger |
Instructions

For the muffins
- Preheat the oven to 350°F (180°C).
- Combine the dry ingredients and stir in the oats and diced peaches.
- Whisk together the eggs, oil, and milk. Fold this mixture into the flour until just combined; avoid over-mixing, a lumpy batter is acceptable.
- Divide the batter into greased muffin cups. If using muffin papers, there is no need to grease them.
- Bake for 15-18 minutes or until the muffins are fully baked and lightly spring back when touched.
- Note: Whole wheat pastry flour or King Arthur White Wheat Flour can be used for a lighter texture and added nutrition. Adjust the amount of blueberries to about 1 1/2 cups if preferred.
