For the muffins

1 canned peaches, drained and diced small
2 cups whole wheat pastry flour (see note)
3 4 cup sugar
1 tablespoon baking powder
salt
1 cup oatmeal, old fashioned or 1 quick oats (not instant)
2 eggs
1 cup milk
1/4 cup oil
1/2 teaspoon baking soda
3/4-1 teaspoon cinnamon
1/4-1/2 teaspoon nutmeg
1/4-1/2 teaspoon ground ginger

Instructions

For the muffins

1. Preheat the oven to 350°F (180°C).
2. Combine the dry ingredients and stir in the oats and diced peaches.
3. Whisk together the eggs, oil, and milk. Fold this mixture into the flour until just combined; avoid over-mixing, a lumpy batter is acceptable.
4. Divide the batter into greased muffin cups. If using muffin papers, there is no need to grease them.
5. Bake for 15-18 minutes or until the muffins are fully baked and lightly spring back when touched.
6. Note: Whole wheat pastry flour or King Arthur White Wheat Flour can be used for a lighter texture and added nutrition. Adjust the amount of blueberries to about 1 1/2 cups if preferred.
