Ingredients

For the Muffin Mix

1 ¼ cups rice flour
1 cup sweet rice flour
½ cup tapioca flour
1 teaspoon baking soda
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon xanthan gum
cup sugar or ⅛ teaspoon stevia powder

Additional Ingredients for Muffins

2 eggs
2 tablespoons vegetable oil
cup water or ⅓ fruit juice
½ cup nuts (optional) or berries (optional)

Instructions

  • For the Muffin Mix

    1. Combine all ingredients in a bowl and store in an airtight container for future use. Note that sweet white rice flour has a somewhat higher gluten content compared to plain white rice flour.
  • For Muffins
