This chicken curry keeps the weeknight speed of the original recipe while moving the flavor toward the curry most home cooks expect: tender chicken in a spiced onion, garlic, ginger, tomato, and coconut sauce. Curry powder gives it an accessible base, with cumin and turmeric adding depth and cilantro and yogurt for a fresh finish.
