2 eggs
2 slices fresh bread (recommended: homemade whole-grain bread)
butter

Additional ingredients

2 tablespoons cheese, shredded (options: cheddar, swiss, muenster, smoked gouda, etc.)
2 tablespoons crispy veggie bacon, chopped (optional)
green onion, thinly sliced (optional)
hot sauce (or ketchup - optional)

Instructions

  • For the toast cups

    1. Preheat the oven to 375°F (190°C).
    2. Generously butter each slice of bread.
    3. Gently press the buttered bread slices into ramekins or muffin tins, buttered side down. Press the bread against the sides of the dish to push the crust above the rim, creating enough space for the egg.
    4. If the bread tears or does not cover the dish completely, patch any holes with a buttered piece torn from another slice of bread.
  • Assembly and baking

    1. Top each toast cup with 1-2 tablespoons of chopped bacon, if using.
    2. Carefully break one egg into each ramekin and season with freshly ground black pepper.
    3. Do not skimp on the black pepper for optimal flavor.
