Ingredients

2 large aubergines, sliced into rings
4 teaspoons salt
pepper, to taste
4 tablespoons olive oil
mozzarella cheese, sliced
vine tomatoes, sliced
2 cloves crushed garlic (optional)
fresh basil, for garnish

Instructions

1. Prepare the aubergines by cutting them into rings that are 5cm thick.
2. Arrange the aubergine slices in a roasting dish.
3. Brush the aubergine slices with half of the olive oil and sprinkle half of the salt over the top.
4. Layer sliced tomatoes on each aubergine slice, followed by slices of mozzarella cheese.
5. Sprinkle the remaining salt, olive oil, pepper, and crushed garlic (if using) over the top.
6. Bake in the oven for 20 minutes at 200°C (400°F) until the cheese is melted and bubbly.
7. Garnish with fresh basil before serving.
