Experience a culinary delight with these elegant aubergine (eggplant) slices topped with juicy tomatoes, creamy mozzarella, and a delightful blend of seasonings. Perfectly baked to golden perfection, this dish is a feast for the senses.

4 | teaspoons salt |

4 | tablespoons olive oil |
mozzarella cheese, sliced | |
vine tomatoes, sliced | |
2 | cloves crushed garlic (optional) |
fresh basil, for garnish |
Instructions

- Prepare the aubergines by cutting them into rings that are 5cm thick.
- Arrange the aubergine slices in a roasting dish.
- Brush the aubergine slices with half of the olive oil and sprinkle half of the salt over the top.
- Layer sliced tomatoes on each aubergine slice, followed by slices of mozzarella cheese.
- Sprinkle the remaining salt, olive oil, pepper, and crushed garlic (if using) over the top.
- Bake in the oven for 20 minutes at 200°C (400°F) until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
