For the Au Gratin

2 tablespoons butter or margarine
2 tablespoons all-purpose flour
12 teaspoon salt
14 teaspoon rosemary, crushed
14 teaspoon pepper
1 12 cups milk
1 cup shredded Swiss cheese
2 cups broccoli florets
1 medium onion, cut into eighths
2 cups fresh breadcrumbs
13 cup butter or margarine, melted
14 cup chopped fresh parsley

Instructions

  • For the Cheese Sauce

    1. Preheat the oven to 350°F (175°C).
    2. In a 1-quart saucepan, melt 2 tablespoons of butter over medium heat.
    3. Stir in flour, salt, crushed rosemary, and pepper. Cook, stirring constantly, until the mixture is smooth and bubbly (about 30 seconds).
    4. Gradually stir in the milk and continue cooking, stirring occasionally, until the mixture thickens and comes to a full boil.
    5. Boil for 1 minute, then remove from heat and stir in the shredded Swiss cheese until smooth. Set aside.
  • Assembling and Baking

    1. In a greased shallow 1-quart casserole dish or a 9-inch square baking pan, place the broccoli florets and sliced onions.
    2. Pour the prepared cheese sauce over the broccoli and onions.
    3. In a small bowl, combine the fresh breadcrumbs, melted butter, and chopped parsley. Sprinkle this topping evenly over the broccoli mixture.
    4. Bake for 25-35 minutes or until the top is golden brown and the broccoli is tender-crisp.
