Elegant Farmhouse Frittata

1 | tablespoon Olive Oil |

2 | Medium Potatoes, thinly sliced |
1 | Small Onion, thinly sliced |
1⁄3 | cup Diced Tomato |
2 | cups Loosely Packed Spinach |
1⁄2 | cup Grated Parmesan Cheese |

Instructions
1. | Preheat the oven to 350 degrees. |

2. | In a 10" ovenproof skillet, heat the olive oil over medium heat. Add the potatoes and onion. Sauté until soft and slightly golden. |
3. | Add the tomatoes and spinach. Mix until the spinach is slightly wilted. |
4. | Meanwhile, whisk the eggs and one-third of the parmesan cheese together. (Whisk the eggs just before adding to keep them fluffy) |
5. | Add the Egg Mixture to the skillet and swirl to distribute evenly. As the egg cooks, pull the sides inward with a heatproof spatula and tilt the skillet so the uncooked egg runs to the sides. |
6. | Once the egg is mostly cooked (center might still be slightly wet), top with the remaining cheese. Place in the oven and cook for 5-10 minutes until the frittata is firm, fluffy, and the top is golden brown. |
7. | Remove from the oven, let cool for a couple of minutes, slice into 4 servings, and enjoy! |
