1 | small onion, thinly sliced |

1⁄8 | teaspoon ground black pepper |
1 | medium tomatoes, coarsely chopped |
For the Frittata | |

| 1. | Preheat the broiler. |
| 2. | In a medium bowl, mix Egg Beaters, shredded Swiss cheese, and nonfat milk until well blended; set aside. |
| 3. | Spray a medium skillet with an ovenproof handle with cooking spray and heat over medium heat. |
| 4. | Add the cut asparagus spears, thinly sliced onions, salt, and ground black pepper; cook and stir for 3 minutes, or until the vegetables are crisp-tender. |
| 5. | Stir in the coarsely chopped tomatoes and cook for an additional 1 minute, stirring occasionally. |
| 6. | Pour in the Egg Beaters mixture. |
| 7. | Reduce the heat to low and cover the skillet with a lid. Cook for 12 minutes, or until the bottom of the frittata is set but the top is still slightly moist. Remove the lid. |
| 8. | Place the skillet under the broiler and broil for 2 minutes, or until the top is set but not browned. |
| 9. | Cut the frittata into 4 wedges to serve. |
