cup filling (leftover roasted veggies, sliced sausage, sautéed kale or Swiss chard, roasted tomatoes, sautéed mushrooms, creamed spinach, etc.—whatever you have!)
2 eggs, room temperature
Parmesan cheese
chives, chopped, for topping

    1. Preheat the oven to 475°F (245°C).
    2. Generously butter a 24-ounce dish, preferably cast-iron. Set it aside.
    3. Pour about a tablespoon of cream into the bottom of the dish and swirl it to evenly cover the surface. Sprinkle some filling into the dish, crack two room temperature eggs on top. Position the yolks towards the center for even cooking. Season with a pinch of salt, pepper, and a sprinkle of finely grated Parmesan cheese. Place the dish in the oven and bake for at least 10 minutes or until the egg whites are set, and the yolks reach your desired consistency.
    4. Remove the dish from the oven and garnish the shirred eggs with freshly chopped chives. Serve the dish piping hot and bubbling for a delightful experience.
