Ingredients

1 cup mayonnaise (low-fat is fine)
1 small onion, chopped
12 teaspoon salt
34 cup Parmesan cheese
2 eggs, lightly beaten
14 teaspoon pepper
2 yellow squash, cooked just till tender & drained
12 cup breadcrumbs (crumbled Ritz cracker crumbs is okay)
1 tablespoon melted butter

Instructions

1. In a bowl, combine mayonnaise, chopped onion, salt, Parmesan cheese, beaten eggs, and pepper.
2. Gently fold in cooked yellow squash into the mixture.
3. Transfer the mixture into a greased 1 1/2 quart casserole dish.
4. In a separate bowl, mix breadcrumbs with melted butter and sprinkle the mixture over the casserole.
5. Bake the casserole at 350 degrees Fahrenheit for 30 minutes or until it is beautifully browned and set.
