Elegant Yellow Squash Casserole
A sophisticated twist on a classic squash casserole recipe.
Ingredients
1 | cup mayonnaise (low-fat is fine) |

1 | small onion, chopped |
1⁄2 | teaspoon salt |
3⁄4 | cup Parmesan cheese |
2 | eggs, lightly beaten |
1⁄4 | teaspoon pepper |
2 | yellow squash, cooked just till tender & drained |
1⁄2 | cup breadcrumbs (crumbled Ritz cracker crumbs is okay) |
1 | tablespoon melted butter |
Instructions
1. | In a bowl, combine mayonnaise, chopped onion, salt, Parmesan cheese, beaten eggs, and pepper. |

2. | Gently fold in cooked yellow squash into the mixture. |
3. | Transfer the mixture into a greased 1 1/2 quart casserole dish. |
4. | In a separate bowl, mix breadcrumbs with melted butter and sprinkle the mixture over the casserole. |
5. | Bake the casserole at 350 degrees Fahrenheit for 30 minutes or until it is beautifully browned and set. |
