Ingredients

¼-½ cup butter
1 cup granulated sugar
2 eggs
2 large ripe bananas
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
12 teaspoon baking soda
12 cup milk
12 cup chopped pecans
1 cup mini chocolate chips (optional)
1 teaspoon vanilla extract

Instructions

1. Prepare the muffin pan by greasing or using paper liners.
2. In a mixing bowl, beat together the butter and granulated sugar at medium speed until light and fluffy.
3. Add the eggs one at a time, beating well after each addition. Then beat in the bananas until smooth.
4. In a separate bowl, mix together the all-purpose flour, salt, baking powder, and baking soda.
5. Alternately stir the flour mixture and milk into the egg mixture until the dry ingredients are just moistened.
6. Stir in the chopped pecans, mini chocolate chips (if using), and vanilla extract.
7. Be careful not to over mix the batter, it should not be completely smooth.
8. Spoon the batter into the muffin cups, filling them about 2/3 full.
9. Bake at 400°F (200°C) until the muffins are lightly golden, for about 15-18 minutes.
10. Transfer the muffins to a wire rack to cool before serving warm.
