Instructions

- Preheat the oven to 350°F (180°C).
- Combine all dry ingredients, excluding the light brown sugar and pecans, in a small bowl.
- Mash the bananas until smooth, resembling liquid using a potato masher.
- Zest the orange, supreme it, and break the segments into bite-sized pieces.
- In a large bowl, whisk together eggs and light brown sugar until light and frothy. Stir in rum, buttermilk, and gradually add oil. Fold in mashed bananas, orange segments, and zest.
- Slowly fold the remaining dry ingredients, excluding pecans, into the wet mixture. Pour the batter into greased loaf pans.
- Sprinkle pecans on top of each loaf and bake for 40 minutes or until a toothpick comes out clean. Adjust baking time for a larger loaf pan.
- Allow the loaves to cool on a wire rack for 10 minutes, then remove from the pan to continue cooling.
- Prepare the glaze by mixing buttermilk with sifted powdered sugar until smooth. Drizzle the glaze over each loaf.
