6 | parsley sprigs |
1⁄2 | cup chicken stock |
1 | cup red wine vinegar |
1 | tablespoon tomato paste |

Instructions

- Preheat the oven to 375°F.
- Generously season the chicken breasts with kosher salt, cayenne pepper, and herbes de Provence.
- Arrange the seasoned chicken in an oven-safe skillet, alternating with garlic, red bell pepper, and carrot.
- Insert the parsley sprigs amidst the chicken and pour enough chicken stock to almost cover the chicken.
- Cover the skillet and place in the oven to braise until the chicken is cooked through.
- Meanwhile, in a separate saucepan, reduce the red wine vinegar to 2 tablespoons.
- Remove the chicken from the skillet and set aside.
- Simmer the skillet on the stove until the vegetables are very soft.
- Discard the parsley sprigs and puree the contents of the skillet in a blender, or use an immersion blender.
- Return the sauce to the skillet.
- Stir in the reduced red wine vinegar and tomato paste into the sauce.
- Gently reheat the chicken in the sauce.
- Serve the braised chicken on a platter, garnished with chopped parsley if desired.
