Savor the rich flavors of this Provencal braised chicken dish, featuring tender chicken breasts seasoned with a blend of kosher salt, cayenne pepper, and herbes de Provence. Braised to perfection alongside garlic, red bell pepper, and carrot, this dish is elevated with a velvety sauce infused with red wine vinegar and tomato paste, ideal for a sophisticated dining experience.

Ingredients

4 skinless chicken breasts
1 tablespoon kosher salt
2 teaspoons cayenne pepper
2 teaspoons herbes de provence
1 head garlic, cloves peeled
1 red bell pepper, diced
1 carrot, diced
6 parsley sprigs
12 cup chicken stock
1 cup red wine vinegar
1 tablespoon tomato paste
chopped parsley (to garnish)

Instructions

    1. Preheat the oven to 375°F.
    2. Generously season the chicken breasts with kosher salt, cayenne pepper, and herbes de Provence.
    3. Arrange the seasoned chicken in an oven-safe skillet, alternating with garlic, red bell pepper, and carrot.
    4. Insert the parsley sprigs amidst the chicken and pour enough chicken stock to almost cover the chicken.
    5. Cover the skillet and place in the oven to braise until the chicken is cooked through.
    6. Meanwhile, in a separate saucepan, reduce the red wine vinegar to 2 tablespoons.
    7. Remove the chicken from the skillet and set aside.
    8. Simmer the skillet on the stove until the vegetables are very soft.
    9. Discard the parsley sprigs and puree the contents of the skillet in a blender, or use an immersion blender.
    10. Return the sauce to the skillet.
    11. Stir in the reduced red wine vinegar and tomato paste into the sauce.
    12. Gently reheat the chicken in the sauce.
    13. Serve the braised chicken on a platter, garnished with chopped parsley if desired.
