Instructions

    1. Begin by par-boiling the potatoes with a pinch of salt and turmeric for approximately 10-15 minutes, ensuring they are slightly undercooked by about 5 minutes.
    2. Create a paste by mixing curry powder, garam masala, and chili powder with a small amount of water.
    3. In a pan, sauté the onion in vegetable oil until translucent, then add the garlic, ginger, and chili. Stir-fry over medium heat for an additional 5 minutes.
    4. Introduce the curry and chili paste to the pan, stirring for an additional 30 seconds.
    5. Incorporate the par-boiled potatoes, curry gravy, yogurt, and spinach. Allow it to simmer for 5 minutes or until the spinach has wilted, stirring occasionally.
    6. Add a knob of butter and a hint of sugar, seasoning with salt to taste.
    7. Finally, mix in the finely chopped coriander leaves and cook for another minute.
    8. Serve the dish garnished with whole coriander leaves on top.
