- Begin by par-boiling the potatoes with a pinch of salt and turmeric for approximately 10-15 minutes, ensuring they are slightly undercooked by about 5 minutes.
- Create a paste by mixing curry powder, garam masala, and chili powder with a small amount of water.
- In a pan, sauté the onion in vegetable oil until translucent, then add the garlic, ginger, and chili. Stir-fry over medium heat for an additional 5 minutes.
- Introduce the curry and chili paste to the pan, stirring for an additional 30 seconds.
- Incorporate the par-boiled potatoes, curry gravy, yogurt, and spinach. Allow it to simmer for 5 minutes or until the spinach has wilted, stirring occasionally.
- Add a knob of butter and a hint of sugar, seasoning with salt to taste.
