Ingredients

1 tablespoon olive oil
2 teaspoons olive oil
1 ½ lbs medium shrimp, peeled, deveined and tails removed
coarse salt to taste
freshly ground pepper to taste
3 garlic cloves, thinly sliced
teaspoon dried red pepper flakes
6 plum tomatoes, cored, halved lengthwise and sliced ½-inch thick
2 tablespoons fresh parsley, chopped
2 tablespoons fresh lemon juice

Instructions

    1. Heat 1 tablespoon of olive oil in a large nonstick skillet over high heat, ensuring the pan is evenly coated.
    2. Season the medium shrimp with a pinch of coarse salt and freshly ground pepper.
    3. Add half of the seasoned shrimp to the skillet and cook for 3-4 minutes until they turn opaque and are cooked through.
    4. Transfer the cooked shrimp to a plate and repeat the process with the remaining 2 teaspoons of olive oil and shrimp.
    5. Reduce the heat to medium, then add thinly sliced garlic and a hint of dried red pepper flakes. Stir in the sliced plum tomatoes and cook for 4-6 minutes until they start to break down.
    6. Season the mixture with a sprinkle of salt and return the cooked shrimp along with any accumulated juices to the skillet. Add chopped fresh parsley and fresh lemon juice, tossing everything together until well coated.
