Ingredients

1 ¼ all-purpose flour
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
12 teaspoon salt
1 cup soy milk
1 tablespoon brown sugar
3 tablespoons pumpkin puree
1 teaspoon vanilla extract
1 12 teaspoons vegetable oil
13 cup water

Instructions

1. In a mixing bowl, combine all-purpose flour, baking powder, pumpkin pie spice, and salt.
2. In another bowl, whisk together soy milk, brown sugar, pumpkin puree, vanilla extract, vegetable oil, and water until well combined. Create a well in the flour mixture, pour in the milk mixture, and stir until the batter is evenly mixed.
3. Preheat a nonstick skillet over medium-high heat. Pour 1/4 cup of pancake batter onto the hot skillet. Cook until bubbles form on the surface and the edges become dry, approximately 3 to 5 minutes. Flip the pancake and continue cooking until the other side is golden brown, another 3 to 5 minutes. Repeat with the remaining batter.
