Instructions

- In a mixing bowl, combine all-purpose flour, baking powder, pumpkin pie spice, and salt.
- In another bowl, whisk together soy milk, brown sugar, pumpkin puree, vanilla extract, vegetable oil, and water until well combined. Create a well in the flour mixture, pour in the milk mixture, and stir until the batter is evenly mixed.
- Preheat a nonstick skillet over medium-high heat. Pour 1/4 cup of pancake batter onto the hot skillet. Cook until bubbles form on the surface and the edges become dry, approximately 3 to 5 minutes. Flip the pancake and continue cooking until the other side is golden brown, another 3 to 5 minutes. Repeat with the remaining batter.
