For the frittata

2 tablespoons olive oil
1 cup diced potato (¼ inch)
1 cup diced leftover ham
1 cup water
1 minced jalapeno
2 greens (spinach, kale, etc)
1 diced red onion
1 cup shredded cheese (optional)
1 cup diced red or green pepper

Instructions

  • For the frittata

    1. Preheat the broiler with the oven rack in the center.
    2. In a medium-sized cast iron frying pan or other ovenproof skillet, heat olive oil. Add diced potatoes, peppers, onions, jalapeno, and garlic. Sauté until the onions are soft. Add leftover ham and cook until heated through. Mix in the greens and water, cover, and cook until the potatoes are tender, about 10 minutes. Uncover and cook until any remaining water evaporates. Season with salt and pepper to taste. Evenly spread the cooked vegetables in the pan and pour in the beaten eggs. Cook on the stovetop until the bottom sets well, then top with cheese. Place the pan under the broiler and cook until the top sets, about 4 minutes.
    3. Serve the festive frittata with a side salad of fresh greens.
