Marinade:

2 lbs beef tenderloin or steaks
1 cup extra virgin olive oil
1 tablespoon minced garlic
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon blackening seasoning
salt & pepper, to taste

Instructions

    1. Begin by cleaning and preparing the filet mignon.
    2. In a bowl, combine the extra virgin olive oil, minced garlic, fresh basil, fresh parsley, blackening seasoning, salt, and pepper to create the marinade.
    3. Place the beef tenderloin or steaks in a zip-top bag and pour the marinade over them. Allow the meat to marinate at room temperature for 30 minutes.
    4. Roast or grill the marinated filet mignon to your desired level of doneness.
    5. Serve the cooked filet mignon with demi-glace or brown gravy for a delicious finish.
