Finnish Oven-Baked Pancake
A delightful Finnish-style pancake baked to perfection in the oven, creating a tender and puffy dish. Can be enjoyed simply or with a warm fruit topping and a dollop of whipped cream.
Ingredients

1⁄4 | cup honey |
3⁄4 | teaspoon salt |
2 1⁄2 | cups milk |
1 | cup flour |
4 | tablespoons butter |
Instructions
1. | Preheat the oven to 450F (230C). Place a 10 1/2" ovenproof frying pan with at least 3" sides in the preheated oven for 10 minutes. |

2. | Meanwhile, in a mixing bowl, beat together eggs, honey, salt, and milk until well combined. |
3. | Add flour to the mixture and beat until a smooth batter forms. |
4. | Once the pan is heated, melt butter in the pan and swirl it up the sides to coat evenly. |
5. | Pour the batter into the pan and bake for about 25 minutes, or until set. The pancake will puff up during baking and collapse slightly once removed from the oven, forming a delightful dish. |
6. | Serve the pancake plain or topped with warmed fruit and a dollop of whipped cream. |
